Who is this man? What is this third heaven? And it says he was caught up to paradise and heard unutterable words which it is not lawful for a man to speak. What does all of this mean?

Thats a good one olm. Im gonna have to do some research on that one. Im sure there are some qualified bros/sis here that can shed a little light on it.

Another one that I've always wondered about are the 7 Thunders in Revelation? who are they...or what do they represent?

That's a good one Olm. The only explanation I could find on it is from the Insight book, under "Heaven":

ok so what is this paradise that paul speaks about? there is the third heaven and paradise that is spoken by paul. hard to understand but i think i understand what you are saying Jeshurun about the third heaven.

Actually I was only quoting the Watchtower's own interpretation of it, it certainly isn't my own insight.
Paul was relating a vision that he had, undoubtedly due to Holy Spirit. He was equating heaven with Paradise, which in essence was the Garden of Eden, which is how the translation could also read, according to the Watchtower's reference notes.
The way I understand it, the "Third Heaven" is that spiritual place up above the immediate "heavens" of the earth's atmosphere.
I guess the best way to describe it is that Paul was being given a foregleam of "spiritual paradise".
